Sweet Chilli Beef Mince Flatbreads

This is one of those quick, crowd-pleasing teas that feels a bit different but uses straightforward ingredients. The beef mince gets cooked with onion and pepper, then coated in a sticky sweet chilli sauce that the kids actually like. Pile it into warm flatbreads with a spoonful of mayo (or yoghurt if you prefer) and you've got a proper filling tea without much fuss or washing up.

Heat the oil in a large frying pan over a medium heat. Add the chopped onion and red pepper and cook for 4–5 minutes until they start to soften.

Add the beef mince and chilli powder. Break it up with a wooden spoon and cook until nicely browned (about 5–7 minutes).

In a small bowl, mix together the sweet chilli sauce, soy sauce and water. Pour this into the pan with the mince, stir well and let it bubble gently for another 5 minutes until the sauce thickens and coats the mince. Season with a little salt and pepper if needed.

While the mince is finishing, warm the flatbreads in the microwave or a dry frying pan.

Spoon the sweet chilli beef onto the flatbreads, top with a dollop of mayo (or yoghurt), and serve straight away.

Recipe Notes

  • Spice level: Start with less chilli powder if you've got little ones – you can always add a bit more next time.
  • Leftovers: Any extra mince keeps well in the fridge for 2 days and makes brilliant loaded jacket potatoes or wraps the next day.
  • Freezing: The cooked mince freezes really well for up to 3 months. Defrost overnight in the fridge and reheat until piping hot.
