Divide the beef mince into 8 loose balls. Do not season yet and don’t pack them tightly — this keeps the burgers juicy.
Heat a large frying pan or griddle over high heat with a small amount of oil until very hot.
Place two mince balls into the pan. Using a spatula or the bottom of a mug, press them down firmly into thin patties. Season with salt and black pepper.
Cook for 2–3 minutes until a deep crust forms, then flip and cook for another 1–2 minutes until cooked through. Add cheese now if using.
Repeat with the remaining patties, cooking in batches.
Lightly toast the brioche buns in the pan or under the grill.
Stack two patties per bun, add any extras you like and serve immediately.
