Pork Steak Fried Rice with Spring Onions

Heat 1 tablespoon of olive oil in a large frying pan or wok over medium-high heat. Season the pork steaks with salt and black pepper and cook for 3–4 minutes on each side until golden and cooked through. Remove from the pan, leave to rest for 5 minutes, then slice into thin strips.

Add the remaining tablespoon of oil to the same pan. Add the chopped spring onions and stir-fry for 1–2 minutes until softened.

Add the cold cooked rice, breaking up any clumps, and fry for 3–4 minutes until heated through and lightly crisp in places.

Push the rice to one side of the pan, crack in the eggs and scramble until just set, then mix through the rice.

Return the sliced pork to the pan. Add the soy sauce if using and stir everything together. Taste and adjust the seasoning with salt and black pepper as needed.

Serve hot.
