Garlic Butter Salmon with New Potatoes

Boil the new potatoes in salted water for 12-15 minutes until tender. In the last 3-4 minutes, add the green beans or peas. Drain and set aside.

Pat the salmon fillets dry and season on both sides with salt and pepper.

Heat the olive oil in a large frying pan over a medium-high heat. Place the salmon skin-side down. Cook for 4-5 minutes until the skin is crispy and the flesh is cooked about two-thirds up.

Flip and cook for a further 2 minutes.

Reduce the heat to low. Add the butter and garlic. Let the butter melt and bubble, then spoon it over the salmon for 1 minute.

Squeeze over the lemon juice and add the zest. Remove from the heat.

Serve the salmon with the new potatoes and green beans, with the garlic butter spooned over.
