Garlic Butter Pork with Mini Roast Potatoes
Tender pork strips cooked in garlic butter, served with crispy mini roast potatoes. A simple, filling tea the whole family will enjoy.
Ingredients (serves 4)
- 500g pork (steaks or strips)
- 600g baby potatoes, halved
- 3 tsp garlic granules
- 3 tbsp butter
- 2 tbsp cooking oil
- 1 tsp chilli flakes (optional)
- Salt and black pepper
Method
- Preheat the oven to 200°C (180°C fan). Toss the halved baby potatoes with 1 tbsp oil, salt, pepper and a little garlic granules. Spread on a baking tray and roast for 25–30 minutes until golden and crispy, turning halfway.
- While the potatoes are cooking, heat the remaining oil in a large frying pan. Add the pork and cook until browned and cooked through.
- Add the butter, remaining garlic granules, chilli flakes, salt and pepper. Stir well so the pork is coated in the garlic butter.
- Serve the garlic butter pork with the mini roast potatoes.
Tip: Add some frozen peas or sweetcorn on the side for extra colour and veg.
