Fakeaways
Crispy sweet potato fries loaded with chorizo, mozzarella and crème fraîche.
Heat the oven to 200°C (180°C fan).
Scrub the sweet potatoes and cut into chunky fries. Pat dry. Toss with the oil, garlic granules, smoked paprika, salt and pepper. Spread in a single layer on a large baking tray.
Roast for 25–30 minutes, turning once, until soft inside and crisp at the edges.
Meanwhile, slice the chorizo into small chunks. Slice the red onion. Fry the chorizo in a dry pan over a medium heat for 4–5 minutes until it starts to crisp, then add the red onion and cook for another 3–4 minutes until softened. Drain off any excess oil if needed.
Pile the fries onto the tray or a warm dish. Scatter over the chorizo, red onion and torn or grated mozzarella. Return to the oven for 3–5 minutes until the cheese has melted.
Snip over the spring onions, add a dollop of crème fraîche and serve straight away.
